Triggered by Volume Doubled

Gentle nudge to prep baking surfaces and preheat Dutch oven when dough has doubled in bulk.

When your dough visibly doubles in volume during bulk fermentation, it signals that yeast and bacteria have produced enough gas to support oven spring. At this point, the gluten network is fully developed but not over-stretched. Use the moment to prepare your baking surface—floured towel, parchment, or baking stone—so it’s ready for shaping and transfer.

Preheating your Dutch oven now gives it time to reach near-oven temperature (at least 450°F or 230°C). This ensures the crust sets quickly upon scoring, trapping steam and promoting height. If you wait until the dough is cold from fridge or bench, the Dutch oven may cool too rapidly, risking poor oven spring and a dense crumb.

This trigger is most accurate when your dough is at ideal fermentation temperature (22–26°C). In warmer rooms, doubling can happen in under four hours; in cooler ones, closer to six. Avoid relying solely on time—watch for the visual cue. A gentle indent that slowly springs back is also a good sign your dough is ready for shaping and final proof.
