Salad Bar in a Box
Build a compact raised bed salad garden using cold-tolerant greens and quick-harvest crops for spring bounty.
Start with a shallow raised bed—8 to 12 inches deep—filled with equal parts topsoil, compost, and coarse sand for drainage. Choose fast-maturing greens like arugula and radicchio, plus early carrots and radishes for depth. Sow seeds in stages over three weeks to stagger harvests. Water gently at soil level to avoid dislodging small seeds, and keep the surface moist until germination.
After seeding, add a light row cover to protect against frost and pests while retaining warmth. Thin seedlings when true leaves appear, using scissors to avoid disturbing roots. Side-dress with diluted seaweed solution after thinning. Watch for slugs in damp weather; set up copper tape or shallow beer traps at dusk. Harvest outer leaves first, letting inner growth continue.
After a few weeks, begin planting warm-weather fillers like bush beans or dwarf peas along the edges where light reaches. Keep a log of germination timing and pest sightings—this helps adjust planting dates next season. Later in the growing cycle, cut back fast-bolting crops like spinach and replace with heat-tolerant greens such as Swiss chard or ornamental kale. By late spring, rotate in early lettuce for extended harvest into early summer.
