This itinerary treats winemaking and breadmaking as twin art forms—both governed by patience, temperature, and microbial life. You’ll visit three tiny wineries where owners pour from their newest batches while explaining how fermentation temperature affects texture and aroma, often pulling from the same wild yeast sources found in local sourdough starters.
Each stop includes a hands-on segment: watching a baker feed a century-old starter, shaping dough by hand, or tasting breads straight from a wood oven while comparing them against the same wines poured earlier. The experience reveals how time, climate, and intention shape both wine and bread in parallel but distinct ways.
Evenings are anchored by communal wood-fired dinners hosted at a family-run bakery with a vineyard view. Menus change daily based on what’s ripe in the garden and fresh in the oven—think roasted root vegetables, goat cheese flatbreads, and fermented fruit desserts—each paired with barrel tastings from the current vintage.
