Bright green, striped Green Zebras hold firm acidity and grassy notes perfect for sharp, textural relishes in early spring sandwiches and boards.
Green Zebras mature relatively quickly and thrive when spring temperatures stabilize above 50°F. Their thin skin and dense flesh make them ideal for pickling without disintegration. For relish, dice the tomatoes and marinate them in a hot brine of apple cider vinegar, sugar, salt, and mustard seeds for 15 minutes before packing into jars. This quick-pickle method preserves their zippy tang while mellowing raw sharpness just enough to complement rich meats and cheeses.
When building charcuterie boards, use the relish as a balanced counterpoint to salty cured meats like soppressata or prosciutto. Its clean citrus-herb backbone also cuts through creamy cheeses such as Brillat-Savarin or aged gouda. Serve chilled and drain excess liquid before spooning onto crusty sourdough for a sandwich that holds structure even when piled high.
Avoid over-pickling: longer brining times turn the skin leathery and mute flavor. For best results, use fully ripe—but not overripe—fruit. Green Zebras retain firmness better than many heirlooms when exposed to acid, but marinate for a few hours before use. Store in the refrigerator up to two weeks; flavor deepens over the first three days.
