Late Harvest Jam

Preserve the last green tomatoes of season into a complex, savory jam—sweet, spicy, and smoky with deep umami undertones.

Use firm, fully mature but still green tomatoes—no yellow or soft spots. Thin-slice ⅛ inch thick with a mandoline for even cooking. Peel apples (Winesap or Northern Spy hold shape best) and cut into same thickness. Combine with grated ginger and smoked salt in a heavy-bottomed pot; no added pectin needed—pectin builds naturally over low, slow reduction.

Cook uncovered at 200°F for 4 to 5 hours, stirring every 30 minutes. The goal is deep color and jammy texture without caramelizing—burnt edges create bitterness. Taste periodically: the jam should coat a cold spoon thickly and hold a ridge when dragged with a finger. Skim foam only in last hour; early skimming stalls concentration.

Hot-pack into sterilized jars, leaving ¼-inch headspace. Process in boiling water bath for 10 minutes if storing over 3 months. Unprocessed, keep refrigerated and use within 3 weeks. Flavor deepens for 2–3 days after sealing—taste after resting before deciding on extra sweetness or acidity.
