We work exclusively with family-run farms growing organic, regionally adapted grains—no commodity imports, no middlemen.
Our partners are working land stewards who prioritize soil health, crop rotation, and heritage varieties like Red Fife wheat, Spelt, and Black Emmer. These grains offer deeper flavor, higher nutrient density, and better performance in long-fermented doughs. Building trust over years means we know exactly where each bag of grain comes from and how it was grown. This traceability lets us honor both the land and the labor behind every loaf.
Seasonal rotations ensure flour reflects regional terroir—spring emmer feels nuttier, fall spelt tends softer. Because we buy direct, farmers can plan cropping around our needs, not just market prices. That consistency lets our bakers anticipate how flour will behave, adjusting hydration and fermentation times by feel and experience rather than relying on industrial uniformity. Our sourdoughs gain complexity from grain variety and timing—not additives.
