Hawthorne Production Bakery
Our main production bakery serves pickup customers on certain weekdays, with Sunday reserved for prep and low-volume orders only.
If you plan to pick up, arriving during morning hours is essential—this is the confirmed window for in-person collection. Orders placed before cutoff the prior evening are baked fresh that morning and held until pickup. Since capacity is limited, arriving closer to closing time increases the risk of finding a sold-out item or empty rack. We recommend confirming your order status online, especially on weekends or for holiday orders.
Sunday is not a public service day; staff arrive early to prepare for Monday’s production and weekend sales. You’ll find dough proofing, ovens reheating, and final quality checks—but no customers. Orders scheduled for Sunday pickup are either moved to Saturday or refunded if not confirmed in advance. This prep focus allows us to maintain small-batch consistency and minimize waste.
Our kitchen operates on tight scheduling to accommodate oven cycles and cooling times. A single batch of sourdough may take 24 hours from mix to oven, so last-minute changes can affect availability. If you’re planning a visit, we encourage checking the live inventory board or our website’s pickup status feed—this helps avoid unnecessary trips and supports our low-waste model.
