Green Zebras

A striped, early-maturing tomato with bright citrus acidity, crisp texture, and unique visual appeal in both green and blush-ripe states.

Green Zebras ripen early, often ready in 60–68 days, making them ideal for shorter seasons or cool climates where early harvests are critical. They set fruit reliably even when temperatures dip, though cool nights can intensify striping. Like most vining types, they need consistent watering—too much fluctuation increases the risk of uneven ripening or mealy texture.

This tomato’s firm flesh and tart punch make it a standout in raw applications: thinly sliced in salads, pickled whole or halved, or incorporated into unripe tomato sauces and chutneys. It holds its shape when lightly roasted or grilled, and its color contrasts beautifully with darker tomatoes in salsas or layered dishes. Unlike many green varieties, it does not remain astringent when fully ripe.

Be aware that texture can shift depending on growing conditions: too much nitrogen or inconsistent moisture encourages mealy fruit. Aim for 6+ hours of sun, moderate fertility, and steady irrigation to maximize crispness. It pairs especially well with herbs like basil and dill, and cuts through rich fats like goat cheese or olive oil beautifully.
