Heirloom Rye Sourdough

This deeply flavorful rye sourdough uses regionally stone-milled grain and native airborne yeast for a complex, earthy crumb.

Heirloom rye varieties like Mätterlich or Wurstwasser contribute a nutty, malty backbone rarely found in commercial bread. Stone milling preserves the bran and germ, which not only boosts nutrition but also absorbs water differently than refined flour, demanding longer hydration times and a gentler handle during mixing. This results in a tighter, more resilient crumb structure than standard sourdoughs made with modern wheat.

Fermentation with wild yeast contributes a distinctive tang and aroma that reflects local conditions. A longer bulk fermentation allows for full enzymatic development, breaking down complex starches and proteins into simpler, more digestible forms. This extended rise also enhances shelf life and reduces the need for added preservatives.

Baking this rye sourdough requires careful control of steam and temperature. Because rye lacks gluten’s elasticity, oven spring depends more on gas retention in the starch gel than in a strong gluten network. Bakers adjust bake times to avoid over-drying while ensuring the interior sets fully—often resulting in a darker, more caramelized crust that signals deep flavor development.
